Larkin Lager
Light bodied golden beer in the Munich Helles style. Very balanced flavor with soft malt & wheat aromas, and crisp noble hop finish. What is a lager? It’s beer brewed with certain cold fermenting yeast strains that takes a few extra weeks of cold storage (lagering) to finish properly. Good things come to those who wait!
It’s a great “first beer of the day” that pairs well with lighter tasting foods, milder cheeses or just another pint of Larkin Lager.

Aviator Red
Buffalo’s favorite Red Ale, and one of the first beers we started out brewing. Ruby red & malty with medium body and spicy hop signature to balance. Drinkable on its own, but full flavored enough to pair with your favorite foods like BBQ, beef on weck, roast pork, and anything spicy.

Juice Caboose New England-style IPA
A trainload of hops go into making this extremely hoppy, but very mildly bitter India Pale Ale brewed with a variety of American hops to give the illusion of tropical & citrus juice. The majority of the hops do not get boiled, therefore less bitterness is extracted and more delicate fruit-like aromas and flavors are imparted to the brew.

Rusty Chain
One of the best selling craft beers in Buffalo, originally created with & for the community organization Green Options Buffalo. Medium bodied Vienna-style amber beer with soft, nutty malt flavors and just enough German hops for balance. “Chain” goes great with chicken, pizza, grilled vegetables… pretty much everything now that we think about it.

Flight of Bison 12pk Variety
A mix of four different Flying Bison beers: Larkin Lager, Rusty Chain Vienna Lager, Juice Caboose India Pale Ale, and a light fruit beer made just for the mix pack, Mango Peach Kolsch.

Seasonals and Special Offerings 2023
We enjoy brewing all sorts of different styles of beer at FBBC. One-off’s and smaller batches are how we have some fun around the brewery. Some of them are only available on draft, some in bottles and some in both. These styles are not always available and some disappear very quickly but they’re all delicious. We use Facebook and other social media to communicate which of them are currently available. So, give us a follow for the latest at FBBC. Cheers!
Duke's Select Golden Ale
A traditional golden ale brewed in the English Bitter style. Muntons UK malts give this beer it’s backbone, while East Kent Goldings hops give it a delicate floral balance.
Brewed mainly to be featured cask-conditioned and on our tasting room’s nitro tap. We will have draft available in early June as well!

A new tart Mexican Lager with agave nectar & lime flavor! Unlike our previous beers with the name “Electric”, this one is not a kettle sour, but is made tart by the addition of lime juice & zest. Pairs well with sunshine, a salt rimmed glass, and some tequila!

Buffaloha Summer Ale
This is a refreshing wheat ale with the addition of pineapple & passionfruit for a tropical aroma & fruit flavor. Pairs well with grilled foods & sunshine…makes a fanatastic beermosa, too!

Hop Cat IPA
A new variant of our classic Oatmeal Pale Ale, Helldiver. This version includes citrusy, aromatic US hops, as opposed to the more mellow British-style original. UK grain adds a noticeble malt character & sweetness, while the addition of oats provide body and a creamy mouthfeel.

Buffalo Kush IPA
A new hazy double IPA featuring bold U.S. hop aromas & flavors, with a solid bitterness. April 20th can release.

Barrel Roll Maibock
Maibock is a Bavarian-style strong lager, traditionally brewed to be the bridge between heavy/dark winter beers and the lighter wheat ales of summer. Released early April on draft only. Much like our Scotch Ale, this smooth beer can pack quite the punch, so be careful!

Bisonberry Kolsch (v. 2.0)
We took our 716 Kolsch recipe and added a blast of blueberry concentrate and extract for a nice color and berry aroma/flavor!

Polonia Pils
Brewed as an homage to Polish tradition in Western NY, and will appear in stores prior to Dyngus Day (the day after Easter). Polonia Pils pours a straw yellow with rich, white foam and an herbal spiciness from the Saaz hops. A soft malt note complements the spicy, floral hop characters of the Hallertau & Saaz hops. Lagered 40 days for a crisp finish.

Fenian Pale Ale
Honoring the ancient and unique games of the Gaelic Athletic Association in Ireland and celebrating the prideful athletes of the Buffalo Fenians of the USGAA for carrying on those traditions. Distinctive in combining Irish malts and American hops for a balanced homage to both sides of the Atlantic, we present our fine pale ale, a proud transatlantic collaboration from Sullivan’s Brewing Company of Kilkenny, Ireland and Flying Bison Brewing Company of Buffalo, USA

Buffalo Peach White Ale
A refreshing wheat ale brewed with real peaches for a bright, fruity & crisp character you will love! We brew this one in anticipation of that first beautiful spring day where you can’t wait to crack open a beer in the sun.

Blackbird Stout
A smooth oatmeal stout; part of our company’s brewing tradition for the better part of its history. Rich & satisfying enough to stand up to bolder tasting fare, yet light bodied enough to have more than a few. Makes an excellent brine for corned beef, btw.

Chocolate Cherry Porter
Inspired by Fowlers Chocolates and released in time for Valentine’s Day, this silky smooth dark ale features additions of chocolate, vanilla, and cherry for a sweet malty treat.

Brindle Porter
This beer is hybrid of brown and black ales in the English tradition, like a brindle coat on a greyhound. Roast aromas & flavors aplenty, but with minimal burnt notes and bitterness, and a slightly chewy dry finish with a touch of English hops. Light bodied enough for a warm day, satisfying enough for a chilly one.

Whiteout IPA
Medium bodied American India Pale Ale using the best UK Pale malt and citrusy, aromatic US hops. The bold hop aromas, flavors, and bitterness are supported/balanced by a solid malt backbone.

Paula's Peanut Stick Porter
This beer honors Paula’s Donuts’ new Larkinville bakery & store located four buildings down from Flying Bison Brewing. Brewed with a variety of dark malts, peanut & vanilla, this 8.0% dark ale will have you craving breakfast all day long.

Paula's Holy Cannoli Strong Golden Ale
This slightly sweet blonde ale is brewed with carefully selected british malts. Smooth like a cannoli in a glass. “Holy Cannoli” combines flavors of pastry crust, vanilla cream, cocoa, cinnamon, and nutmeg.

716 Kolsch Golden Ale
Kölsch is a style of German beer native to Cologne (Köln) and is one of the most drinkable beer styles on the planet. We use Pilsner malt and a bit of malted wheat for a light body & soft malt flavor while German hops balance the sweetness, flavor and bouquet. The first beer we ever made, under the name Dawn Patrol Gold.

Summer Tart

Buffalo Pils
You probably know who John Lang is and don’t even realize it. Over 30 years ago, he bet a friend a box of cigars he would show up at the game dressed up and make it on national television. He did, and besides Covid, he has missed just three games at home ever since- sporting his jumpsuit, cape, side-burns, and a guitar with all kinds of slogans painted on it. Let’s raise a toast to this local super fan and the team he loves! Let’s Go!

Oktoberfest Lager
This is a malty, satisfying amber colored Bavarian-style lager in the Marzen style. This style of beer was originally used to celebrate a royal Bavarian wedding in the early 1800s…we just brew it to celebrate the last amazing month of summer and the start of the autumn season.

MacBison Pale Scotch Ale
Rich, malty ale in the Scottish style. MacBison has been our official holiday beer since the beginning, It has a decent amount of alcoholic strength and malt sweetness, but not too heavy a body and not too dark a color.

Sleigh Rider Ale
After a few years of brewing spiced holiday ales, we decided to switch it up and make it more of a light-bodied fire-side sipper with flavors of a classic Chistmas morning: aromas/flavors of coffee, pastries, and chocolate abound. Brewed with light roasted Brazilian coffee, cacao nibs, and vanilla, this beer is sure to please the palate and warm you up this winter.

Blizzard Bock
This is a classic German-style dunkel bock. It has rich, toasty malt flavor with hints of soft chocolate. The German-style hop varieties are subdued to allow the malts to star in this satisfying beer. It got us through some of the worst winters in recent memory, it can get you through anything.

Hazy Chain Pineapple Double IPA
Nothing says “Summer” more than a smooth, BOLD, PINEAPPLE Double IPA. Made with REAL PINEAPPLE!!! Soak up the sun with the boldest, fruitiest flavor that Flying Bison Brewery has to kick off the summer. Look for intense, bright hop character imparted by Citra and Simcoe hops with a smooth finish.

Raspberry, Blackberry, and Guava juice come together inside the mouth-watering Flying Bison Hazy Chain Fruit Smoothie Double IPA! This bold, flavorful and easy-drinking IPA builds on our “Hazy Chain” line of 16oz big beers with a twist of fruit smoothie goodness.

‘One-Off’s’ & Specials – Brewery Only
Our brewers enjoy experimenting with many different flavors and styles that can vary greatly from our normal brews. They’re only available at the brewery in the tasting room but if you’re lucky you might be able to snag yourself a growler. And if you’re really lucky you might find one of them hooked up on the handpull! Some, unfortunately will only pop up every few years.
- Red’s Brown Ale – Brewed in loving tribute to our co-founder Larry “Red” Mrozek, who passed away in fall of 1997. This recipe for this session dark ale comes courtesy of our Hop Jack (with fine tuning by Red himself) and features the bold roast of Brown malt balanced with the classic pine & citrus aromas of Cascade & Centennial hops.
- ‘Super Freak” IPA w/ Brettanomyces – Citrusy US hops, wild yeast funk, and citrus peel spice in perfect triple harmony! This beer gets its name from the Godfather of the Buffalo funk scene, Rick James. We ferment this ale with wild Brettanomyces yeast strains to add a touch of tartness and funky aroma. The goal is to unite lovers of hops, sour ales, and fruit with a supremely balanced beer.
- Bisonator Doppelbock – Based on a 2008 World Beer Cup medal-winning recipe created by our founder Tim & our friend Dave Schlosser (currently of Naked Dove Brewing). Deep malt flavors are the star of this sweet & sticky German strong lager, last brewed in 2015.
- Two Sisters’ Wee Heavy Ale – A brew with roots in homebrewing and it’s name recalling a Scottish leg of one year’s Flying Bison European Beer Tour. Strong & dark Scotch Ale brewed in a small batch by our crew members Tim H, Dave C, and Mark A. 2017 also saw the release of a batch aged 9 mos. in a Buffalo Distilling ‘One Foot Cock’ bourbon-style whiskey barrel!
- Helldiver Oatmeal Pale Ale – A medium-bodied British pale ale featuring the spice & tea-like aromas of Bramling Cross hops and the addition of oatmeal for a creamy body.
- Barnstormer Pale Ale – One of our original beers, an American Pale Ale featuring Cascade hops. Most recently brewed 3 years ago with all NY-grown hops & barley (which was, at the time, the largest batch of all-NY-ingredient craft beer made).
- Down By the River Belgian-style IPA – Clove & spice and a dry fizziness from Belgian Ardennes yeast complemented the citrusy flavors and light hop bitterness of this IPA. Based on a Buffalo Beer Week collaboration with Community Beer Works of the same name. A great beer to both convert hop-haters AND satisfy hop lovers…and also to unite Neil Young and Chris Farley fans.
